Banana Roll Cake

For the dough

  • 5 eggs
  • 100 g sugar
  • 60 g flour
  • 1 pinch of baking powder

For the filling

  • 5 eggs
  • 200 g sugar
  • 200 g butter
  • 200 g chocolate
  • 100 g walnuts, hazelnuts, almonds and candied fruit (I put cranberries)
  • rum essence
  • 1 banana

For garnish

  • 1 banana
  • white chocolate



  1. Mix the egg whites with sugar till you get a foam.
  2. Add egg yolks, flour, cocoa and baking powder.
  3. Mix well with a spatula (from the bottom up) after each ingredient.
  4. We introduce composition into heated oven in a pan with baking sheet.
  5. Bake on low heat.
  6. When it’s ready, leave it a little to cool down, remove from pan and roll it in a wet towel or foil.


  1. Rub the eggs well with the sugar and cook on a steam bath until is thick.
  2. When are ready, add the chocolate pieces and stir until it melts.
  3. Then put almonds and rum.
  4. When it’s cold mix with butter.
  5. Unroll the cake and put the cream and the banana in the end roll back the cake.
  6. Garnish as desired.
