Creamy seafood cheddar melts

Looks so yammy! I love making melts for dinner. Smothering things with cheese is always a good idea! I’m going to make this soon.

Ingredients:

makes 4 open-face melts

4 strips of bacon, chopped into 1-inch pieces
1/3 cup / 80 ml finely diced onion
1/3 cup / 80 ml cup finely diced red pepper
2 tbsp / 30 ml all-purpose flour
¼ tsp / 1.25 ml black pepper
½ cup / 125 ml heavy cream
½ cup / 125 ml water
300 g / 10.5 oz M&M haddock fillets (still frozen)
250 g / 9 oz M&M medium cooked shrimp (still frozen)
1/4 cup / 60 ml chopped fresh parsley
2 ciabatta buns, sliced in half
½ cup / 125 ml grated sharp cheddar
