Potato and Cheese Pierogis

Good recipe, but double the dough or you are left with too much filling. Also, once they are boiled, I sautee some butter in a pan add fresh garlic and some dried or fresh parsley. Put the pierogi are in a bowl, pour butter mixture over and toss. Salt and Pepper to taste. Yummy!


For the Dough:

    • 3 and 1/2 cups flour, plus extra for dustin when you roll the dough out
    • 3 eggs
    • 1 tsp. salt
    • 1/4 cup sour cream
    • 3/4 to 1 cup water
For the Filling:
  • 5 medium-sized red potatoes
  • 2 Tbsp. extra virgin olive oil
  • 2 cloves garlic, minced
  • 1/4 of a large yellow onion, chopped
  • salt and pepper to taste
  • 1/2 tsp. dried thyme
  • 2 Tbsp. milk (I use skim)
  • 1/2 cup parmesan cheese, shredded
  • 1/2 cup fontina cheese, shredded
  • 3-4 Tbsp. unsalted butter, for frying
